This TRIPES A LA MODE DE CAEN poster - with art by Jules Chéret- shows a well-dressed smiling chef preparing Tripes a la mode de Caen, a favorite dish in Normandy. Caen is the largest city in lower Normandy, located in northwestern France. The culinary favorite there is an acquired taste which includes many interesting, flavorful ingredients including: carrots, onions, leeks, garlic, cloves and apple brandy or apple cider and cattle hooves/bones. The ingredients are mixed together in a special utensil (a special earthenware pot for cooking tripe) also featured in the poster. Bon Appetit.
